Love me some food people…the problem is that I don’t really like cooking it! So when I cook, I like to take the absolute quickest route to the finish line. I really need a personal chef, anyone?
In Italy, potato pizza can be found in most pizza shops. There are many different varieties and recipes all in which involve quite a few steps that I just don’t feel like doing like making your own dough and chopping potatoes into paper-thin rounds. I say no to that! So, rather than miss out on this delicious Italian staple. I decide to come up with a semi-homemade version. So for all you other food slackers out there, here it is!
So start with these ingredients:
- Pizza dough from a Chef Boyardee Pizza Kit (that man can make a mean pizza dough)
- Extra Virgin Olive Oil (this is a family meal)
- 2 cans sliced canned potatoes
- Bacon pieces
- Shaved parm
Pre-heat oven 425 and grease yourself up a cookie sheet and then follow the directions on the box for the pizza dough. While the dough is rising, drain and dump your tators into a bowl. Salt and pepper them and then toss them with a little extra virgin.
Spread the pizza dough out on the pan and sprinkle a little extra virgin all over. Layer your tators on top of the dough. Sprinkle with parm and bacon and bake for 16-20 minutes until edges are crispy:)
