These days when I’m at the grocery store, I try to get at least one item that I have never tried before and a whole artichoke was this weeks item.
Man, I knew I liked artichokes, but I usually just eat them out of the can.
I didn’t even know how to cook the thing, so I shot on over to YouTube to get a couple of pointers.
I learned that you cut about an inch off the top and cut the stem off the bottom, rinse it and then boil it. I also learned the hard way, that they have sharp pointy things that hurt you very much on the top of the petals. If you don’t feel like shedding a little blood, you can cut those off with some scissors.
It takes about 25-45 minutes to cook. When mine was soft and spreading out. I knew it was done.
I took it out, drained it and sprinkled it with sea salt.
If your confused on what you can actually eat, you just peel off a petal and scrape your teeth from the middle down to the bottom and discard. You just keep on pluckin’ and scrapin’ those petals till you get down to the center. There you’ll find a hairy weirdee part that you have to scrape off with a spoon to get to the good stuff underneath which is the “heart”! Ahhh..how romantic!
I’ll tell ya people, whole artichokes and canned artichokes are two different things entirely. Ones good and ones GREAT. I also found out that these whole artichoke hearts taste just like mashed potato. What a great guilt free substitute for tators, man!
If you’re on a calorie splurge you can dip your petals in a little butter or mayo. (sounds dangerously good)
Eating a whole artichoke is like having a fun little mini party with a gift at the end, or maybe I just like food “THAT” much..LOL!

Well, this next week will mark a month on the Hunger Games Diet and I have won the battle for now!
I’m going from the “Hunger” plan to the ” HELP” plan moving forward. HELP stands for Healthy Eating Lifestyle Plan. The key to this little plan is….HAVE A PLAN! Cause if I don’t have a plan, I’m sure more likely to go gorge myself on whatever is convenient such as chocolate cakes, fast food, candy bars, slurpies, and doughnuts. Planning is essential:)
However, I am sure that you people grow tired of looking at what I like to eat, so this will be my last meal plan post (unless ya’ll have grown dependent on them, if so speak up).
You know what to do now: plan healthy, drink water, keep your portions in check, indulge… but don’t lick the plate. Simple:)

We were having company in town this weekend and I didn’t want to starve them out on my Hunger Games Diet, so I went hunting for a low-calorie, low-fat dessert alternative and this is what I found, Diet Sprite Funfetti cupcakes.
This is an instance where the name truly says it all cause the only two ingredients in these little fellows are Funfetti cake mix and diet Sprite…ahhh..the secret ingredient.
You dump your box of cake mix in a bowl and add about 10 ounces of diet Sprite, stir it up and bake it.
I was a bit hesitant about this deal until I tried it, but they are actually very good. They have a lightly chewy brownie consistency and didn’t have the dietey taste I expected from the Sprite. They also taste a little like cake batter, which I love. I did sprinkle a little powdered sugar on top to mimic frosting.
Apparently, you can make any cupcake or brownie with this method using diet Coke, Dr. Pepper, Mountain Dew…basically match the color of your cake batter with the soda.
Let’s break this down shall we:
Regular Funfetti Cupcake with frosting= 240 calories
Funfetti Cupcake no Frosting=150 calories
Diet Sprite Funfetti Cupcake no topping = 60 calories ( yep)
My cupcakes went over great, too bad though that I completely went food crazy this weekend with potato salad, french fries, BBQ and Pizza. There I’VE SAID IT and I’m blaming it all on my company. Thank goodness it’s Monday.

Get Tipsy:
We went to this great restaurant, Frog Hollow Tavern and this was one of the drink specials. For some reason, I can’t recall the name, so I’m just gonna call it “Cathead”, but it was beautiful, not too sweet and super refreshing and it’s my new favorite drink.
To make this drinky take some Cathead Vodka, tonic, splash of plum juice, splash of lime juice, and plum garnish! Perfect Summer Drink:)
Eat Pie:
Lordy Mercy, we went to the horse races this weekend and I was introduced to derby pie. I can’t stop thinking about this chocolately, pecanny, goodness! It’s pretty much my dream dessert, chocolate and pecan pie mixed all together. I was gonna take a picture of the actual pie I ate at the races, but it was gone before I got a chance. It was THAT good.
Yep, gotta make one of these.

Hey there! It’s Tuesday…how about I share two yummy recipes that I tried recently and loved.
Take these to a party or just have a party at your house, whoop, whoop!
I was looking for a dessert recipe to take to a get together this weekend (Hi Dana:) when I spotted this heathy goodness pictured above!
The original recipe I saw from the Delicious Life was fairly easy, but had a number of ingredients in it.
The Piggy needs a shortcut!
I found this super easy 4 ingredient blondie recipe at Food.com. Just sub Heath where you would normally use chocolate chips.
Ingredients:
1 (18 ¼ ounce) box yellow cake mix
2 large eggs
½ cup butter , melted
1 chopped up Heath Bars or Heath Toffee Bits
Directions:
Preheat oven to 350. Set aside 13×9 pan.
Blend cake mix, eggs and melted butter with electric mixer on low-speed until the ingredients are moistened (about 1 minute). Scrape down sides and stir in chocolate chips (Heath), stirring until well incorporated. Mixture will be very thick.
Scrape mixture into 13×9 pan. Using fork or fingertips, press batter out evenly so that it reaches all the sides.
Bake until golden brown and a toothpick inserted in the center comes out with a few crumbs attached. Bake 20-25 minutes. Cool on wire rack for 30 minutes before cutting into squares
(If ya wanna get fancy with your recipe, top your blondie with vanilla ice cream and caramel sauce)
I love me some egg rolls, but I hate the grease that comes along with them.
Well, I tell ya, I may never eat a fried egg roll again after eating these baked veggie wontons. I made these for dinner last night and It was seriously hard to stop eating these yummy little Chinese treats!
So much better than the greasy crazy hot mess you get at a Chinese joint. What I love most is you can control the ingredients in your roll. You know… more or less this or that and the cream cheese is the secret ingredient in these, wow!
Great for meatless dinners or would make a great appetizer for any get together.
Baked Vegetable Wontons
1/3 cup grated carrots
1/2 cup cabbage, finely shredded
1/3 cup mung beansprouts
2 green onions, chopped
2 garlic cloves, minced
1/2 cup chopped shitake mushrooms
1 TBSP soy sauce
1 oz cream cheese
1/2 tsp sesame oil
small wonton wrappers
Preheat oven to 400 F.
Heat a tsp of oil in a saute pan. Add the carrots through mushrooms and saute for 2-3 minutes. Set vegetables aside and let cool.
Add the cooled vegetables to the rest of the ingredients and combine well. Put a generous teaspoonful in the center of each wonton. Dampen the edges of the wonton with water and fold the wonton wrapper in half, pressing at the damp edges to close.
Place each finished wonton on a baking sheet lightly coated with cooking spray. Cook wontons in hot oven for about 15 min or until wontons are slightly browned on the bottom. Serve with a little soy sauce on the side.
Okay..dig in!
